I have a confession to make. It’s true: summer throws me off my mommin’ game.
I’m a little lazier (ok, a lot lazier) and spend a lot of time just chilling with the kids.
That means my one summer birthday kid can sometimes get left out! This year, I vowed to change that.
We had a small party for her recently with a few kids from school, and crazy enough, their favorite party snack was the birthday cake popcorn I made.
Mostly healthy-ish, too!
I love popcorn- I love it a lot- and so do my kids. I’ve been known to eat a whole bag of it in one sitting, especially if I’m hanging with the kids on the couch watching a movie.
It could be worse, right? It’s not a bad choice at all as long as I keep it in moderation, of course.
A simple bag of popcorn can be a healthy summer snack option for the kids and me.
One of the go-to’s I’ve reached for this summer is JOLLY TIME Pop Corn. What makes it a great option? It’s a fiber-filled, low-calorie snack. Take the challenge to swap out some high-calorie snacks for JOLLY TIME Pop Corn!
It’s a natural, whole grain food that’s low in calories and fat. You can’t get much better than that!
It’s also usually a hit at any kid party I’ve attended- especially when you create something special with it! Naturally, this increases the calories and fat just a bit, but it’s still a relatively guilt-free snack option. And it’s a sneaky way to slip in some extra fiber. Don’t tell the kids it’s good for them!
This is a great recipe, which I think is perfect for the fall and football season. Be sure to check it out!
But since we’re talking about simple summer celebrations, I’m sharing this sweet snack that made my birthday girl smile!
Birthday Cake Popcorn
- 6 cups JOLLY TIME Pop Corn
- 3 tablespoons butter
- 3 cups mini marshmallows
Pop the popcorn and lay out on parchment paper or greased pan. Be careful to leave any unpopped kernels out.
In a saucepan, melt the butter and add in the mini marshmallows.
Stir until it’s completely melted.
Pour the melted mixture over the popcorn. Mix the popcorn and marshmallow mixture together until it’s covered and add sprinkles. Allow to cool.
Store in an airtight container.
If there’s any left over, that is!
She loved it and I loved watching her smile when her friends said it was the coolest popcorn EVER.
A party in the summer doesn’t have to be hard, it just has to include some special touches.
I decorated the table in this cute paper I found at Michaels to match the sprinkles in the popcorn. My girl picked up on that right away!
Summer’s are hard on this mom, but with JOLLYTIME Pop Corn, I made a birthday celebration special.
Happy birthday, sweet Lu!
