I ask you- isn’t every day National Pancake Day?
So, sure, sure it is! But to be fair, I think there is actually something like 5 different “National Pancake Days” according to the Google.
If you choose to celebrate today or any day, I’m all on board, however.
Almond Keto Pancakes
And these delicious and simple seven-ingredient Almond Keto Pancakes are the perfect way to celebrate in a low carb way.

This is a quick and easy low carb breakfast option for those on the keto diet who are looking for something other than eggs, bacon and avocado for breakfast.

Almond Keto Pancakes Ingredients
1/2 cup almond flour (go ahead and let the measuring cup overflow just a tad!)
1/2 cup Philadelphia full fat cream cheese (don’t do the generic kind; it *does* make a difference in taste!)
1/2 tsp cinnamon
1 tbs almond extract
1 tsp baking powder (optional if you prefer fluffy keto pancakes)
Almond Keto Pancakes Directions
Mix everything except butter in a blender for a smooth batter consistency.
Heat a griddle or skillet to medium heat.
Add a dollop of butter- you’ll fry your pancakes in this to give it an extra buttery flavor!
Pour a palm size amount of batter over the butter for each keto pancake you’re making.
Watch the pancakes for bubbles; when the top starts bubbling and popping, that signals time for a flip!
Serve with butter or your favorite keto approved toppings.
