Summer Slump For Moms
I have a confession to make. It’s true: summer throws me off my mommin’ game.
I’m a little lazier (ok, a lot lazier) and spend a lot of time just chilling with the kids. There’s a lot of TV, a lot of lying around on the couch, and just a lot of lazy going on over here.
And you know what? I don’t have any guilt about that. Ha. Except when it comes to my one summer birthday kiddo.
She can sometimes feel her birthday was blown off mostly because we’re all feeling the chill-out summer vibes. This year, I vowed to change that. She actually got two back-to-back weekend trips around her birthday (one to Hershey Park and one to Gaylord National Harbor) so she felt a little spoiled!
Since we traveled a bit, I was off the hook for planning a party at home. Something I’ll admit I wasn’t upset about. I love the actual party, but the clean-up afterward? It’s usually enough stress on me to have me forgo the whole thing when I can!
Birthday Cake Popcorn
Last year I put together a small birthday party for her with the kids from school and crazy enough, their favorite party snack was the birthday cake popcorn I made.
Mostly healthy-ish, too!
I love popcorn- I love it a lot- and so do my kids. I’ve been known to eat a whole bag of it in one sitting, especially if I’m hanging with the kids on the couch watching a movie.
It could be worse, right? It’s not a bad choice at all as long as I keep it in moderation, of course.
A simple bag of popcorn can be a healthy summer snack option for the kids and me.
It’s also usually a hit at any kid party I’ve attended- especially when you create something special with it!
Naturally, making birthday cake popcorn increases the calories and fat just a bit, but it’s still a relatively guilt-free snack option.
And it’s a sneaky way to slip in some extra fiber. Don’t tell the kids it’s good for them- ha!
I’m sharing this sweet snack of birthday cake popcorn that made my birthday girl smile- hope it does the same for yours.
Birthday Cake Popcorn Recipe
Birthday Cake Popcorn Ingredients
- 6 cups Popcorn (microwave or air-popped)
- 3 tablespoons butter
- 3 cups mini marshmallows
- sprinkles
Birthday Cake Popcorn Directions
Pop the popcorn and lay it out on parchment paper or greased pan. Be careful to leave any unpopped kernels out.
In a saucepan, melt the butter and add in the mini marshmallows.
Stir until it’s completely melted.
Pour the melted mixture over the popcorn. Mix the popcorn and marshmallow mixture together until it’s covered and add sprinkles. Allow to cool.
Store in an airtight container.
If there’s any leftover, that is!
She loved it and I loved watching her smile when her friends said it was the coolest popcorn EVER. Birthday cake popcorn FTW!
A party in the summer doesn’t have to be hard, it just has to include some special touches.
I decorated the table with this cute paper I found at Michael’s to match the sprinkles in the popcorn. My girl picked up on that right away.

I looooove popcorn. In fact, I have 7 hot & humid miles to run tomorrow, and I’m planning to be snacking on some popcorn tonight. I have a glass popper that goes in the microwave. But I do like it buttered, so I melt some butter and pour it over. Yup, real buttered popcorn!
