Why Do We Love Chicken Pot Pie?
Honestly, I don’t have a great answer for this.
Other than for me it’s a little about nostalgia.
My mom used to make us mini chicken pot pies during the winter months so this dish always feels a little like home for me.
But do you care about that?
Nope, you just want the recipe (I see yall on the internet complaining, ha!)- so let’s get to the deets on this easy cast iron skillet chicken pot pie

Ingredients Needed For Easy Cast Iron Skillet Chicken Pot Pie Recipe
- cast iron skillet
- 2 cups cooked chicken, cubed or shredded
- 1 can biscuits (or you can use a pie crust or make your own, but biscuits make this the easy option!)
- 3 T butter
- 1 cup chopped carrots
- 3 T flour
- 1 cup milk (you may need more – depends on the type of milk you use and how thick you want the mixture to be)
- ½ cup chopped celery (optional)
- Rosemary or thyme (optional)

Directions For Making A Chicken Pot Pie
- Preheat oven to 400*F.
- Melt butter in a cast-iron skillet over medium heat.
- Add in flour and stir, whisking in milk.

- Add chicken and veggies and stir until all ingredients are coated.
- Pull the biscuits apart and place them on top of all ingredients.
- Bake for 25 minutes or until biscuits are cooked through.

Let it cool just a tad before you start scooping this onto plates.
1- because it will burn your mouth straight out of the oven!
and
2- the whole thing will “hold together” a bit more if it has some time to settle.
This one is SO good and a definite family favorite. My kids are always asking when cast iron skillet chicken pot pie night is back on the calendar!

This looks delicious and I love how easy it seems. I will definitely be making it. I also like that you actually used butter and milk – I’ve seen a lot of chicken pot pie recipes that use chicken broth or even cream of chicken soup but this looks much better!
