Full disclosure: I’m not a chef or even much of a cook. Which explains why I’ve been known to eat out way too much and in turn put on some weight.

What is the Keto Diet?
The keto diet is a low-carb way of eating that focuses on fats and proteins in your diet.
It’s very low-carb, lower even than an Atkins diet. But it focuses on high-fat foods and a big reduction in carbohydrates.
This fat loading puts your body into a metabolic state called ketosis (aka, keto).
And when this happens, watch out! Your body becomes an effective engine for using fat as fuel, which in turn helps you lose weight.

Alright- let’s get to the good stuff!
This keto pie is going on the table for my keto Thanksgiving and keto Christmas.
I’ll update you with more keto recipes perfect for the holidays as I work on them, so be sure to check back!
Low-carb works for me, meaning I need to make sure even the holidays are full of low-carb recipes.
But that doesn’t mean giving up any of the flavors we love.

This isn’t as easy as stopping by Giant and picking up a fully baked pie, but it tastes just as good- or better!

Ingredients for Low-Carb Pumpkin Pie Recipe
- 1 almond flour pie crust (I made mine using this recipe and it gets big thumbs up!)
- 1/2 cup heavy whipping cream
- 1 15-oz can pumpkin puree
- 2 large eggs
- 2/3 cup powdered erythritol.
- 2 tsp pumpkin pie spice or gingerbread spice
- 1 tsp Vanilla extract
- 1/4 tsp sea salt

Pumpkin Keto Pie Directions
1. Make your favorite Almond Flour Pie Crust.
Mine turned out perfectly and I couldn’t be happier with the consistency and taste.

And here’s what it looked like when it came out!

2. Mix all of the ingredients together with a blender or hand mixer.
If you can find some cute helpers like I had, go for it!
This keto family recipe is definitely kid-friendly; my daughters made this keto pie with very little assistance from me.


3. Once the pie crust is cool, transfer the keto pumpkin pie filling into the crust. Be careful not to overfill it!
4. Bake at 325 for 40-50 minutes.
You want the pie to be almost set; a little soft in the middle is best to prevent cracking.

5. Let the pie cool at room temp or for at least an hour in the fridge before serving.
6. Top with Keto Whipping Cream and enjoy!
