I hate cauliflower. Like- with a passion. But this low-carb faux twice-baked potato recipe? I eat the heck out of it! This was one keto recipe I avoided until the sirens call of holiday mashed potatoes was on the horizon. This is now a favorite keto family meal and you’re going to want to give this keto twice-baked cauliflower mash a try!

Keto Family Meal: Cauliflower Mash

Just goes to prove that if you add enough cream cheese, sour cream, and garlic to something you will fall in love.

Cauliflower was a hard “no!” in my house.

But when I started the keto diet, I discovered that just about every keto recipe that I was interested in included the dreaded white veggie.

I was definitely a skeptic; and so were the kids.

But we made this Loaded, Low Carb Twice Baked Cauliflower faux mashed potato casserole and were shocked to discover this became a favorite keto family meal.

Remember: I’m not a chef or a cook. Just a mom searching for good-tasting food for the family – that will also help me reach my health goals.

So what is the keto diet anyway?

The keto diet is a low-carb way of eating that focuses on fats and proteins.

It’s very low-carb, lower even than an Atkins diet. But it focuses on high-fat foods and a big reduction in carbohydrates.

This fat loading puts your body into a metabolic state called ketosis (aka, keto).

And when this happens: watch out! Your body becomes an effective engine for using fat as fuel, which in turn helps you lose weight.

Keto Twice Baked Cauliflower Mash (Can’t Believe It’s Not Potato!)

It’s a keto family meal on its own, but pair it with Thanksgiving turkey, Green Bean Casserole, and Keto Pumpkin Pie and you’ll thank me!

 

Keto Cauliflower Mash Ingredients

  • 1 medium-head cauliflower
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 4 green onions chopped
  • 8 strip bacon, crumbled
  • 1/3 cup heavy whipping cream
  • 1/2 cup sour cream
  • 4 ounces of cream cheese
  • 1 1/2 cups shredded sharp cheddar cheese
  • sea salt and black pepper

Keto Cauliflower Mash Directions

This is really as easy as making mashed potatoes. You’re just using something a bit more low-carb!

1. Preheat the oven to 350 F.

2. Boil or Steam the cauliflower in a large pot. Use chicken stock and garlic for this part.

It should take about 15 minutes or until the cauliflower is soft enough to mash.

3. Drain the chicken stock from the pan.

Mash the cauliflower, and add the heavy whipping cream, cream cheese and sour cream.

Once well mashed and smooth, mix in the cheese, bacon, green onions, sea salt, and black pepper.

4. Transfer the mixture to a casserole dish and bake uncovered for 15 to 20 minutes.

I Can't Believe It's Not Potato | Keto Twice Baked Cauliflower Mash

Low-carb, keto and gluten-free alternative to the traditional twice baked mashed potato. Perfect for holiday meals!

Ingredients

  • 1 medium head cauliflower
