LOST: Mojo | Atkins Breakfast to the Rescue

I think this post comes around every year.

The “I’ve lost my mojo and too much stuff is happening” post.

Excuses.? Everything is happening all at once and I don’t know how to deal.

My kid’s baseball team is ramping up (who DOES this in December?!)? Schools are doing their end of semester parties, fund raisers, AND testing.?? And my entire family is coming out to visit for Christmas (yay!) which means I actually have to clean and prepare the house for the invasion visit.

Running?? Meh.? The joy isn’t there right now because I feel overwhelmed with other issues.? Finding the time has become a chore.

Gym?? Hope they enjoy my money this month because I can’t seem to get there.

Eating right?? Hey… about that….

I’m on a roll.? I planned, shopped and cooked great meals all this week.?? High on proteins and vegetables, low on extra carbs.

I know, whaaaaatttt????? Hey… Atkins FTW!? The longer I’m consciously paying attention to the Atkins diet plan, the easier it becomes to make it a lifestyle choice.

I find this weird that when everything else is falling apart, this one aspect is actually coming together.

Weird, but in a very good way.? So I’m going to run with it!

This week I tried out one of the frozen meals that Atkins was kind enough to send me.

Now, I love eggs.? I could eat eggs every day.? I don’t, but I could.

They are cheap (hey- that’s just my way of saving more money for Disney trips!), filling, and delicious.

Not to go all Forest Gump on you, but I like them hard boiled, scrambled, over easy, sunny side up, poached, in a taco, on a biscuit… well, you get the idea.

I haven’t had a lot of luck in the frozen meal department with my eggs though.? They tend to over cook and come out dry.

So I was skeptical with this product.

I did, however, love these stats.

If you are like me, protein intake is always a struggle.? This one egg sandwich came with 19 grams though.

19.? That’s a GREAT way to start the morning!

And no sugar added?? Big time plus for me right there.

With the holidays here, my sugar intake has been much higher than it’s supposed to be.? I’ve been struggling to say no to the cookies and sweets that are flowing into my house from friends and neighbors.

 

Thanks, guys, I mean it.? But don’t you read my blog??? I’m trying to stay away from the crap this year!

Following the directions on the box was pretty easy.? I mean, it’s a microwave meal, right?

I lowered my cooking time by about 10 seconds.? I hoped to avoid that rubbery over cooked egg taste that happens with some products.

Out came the perfectly cooked sausage, egg? and cheese sandwich.

My kids asked for a bite too- and then asked for the 2nd sandwich in the box.

No problem!? A quick, hot breakfast before school is the perfect combination to combat those testing blues!

Now that I’m fueled and feeling full, I’m going out to find my mojo.

I think it’s hiding around the corner by the park.? So I’ll run that way first and see if I can catch up to it!

  1. I’ve definitely lost some of my mojo! I started getting lazy and careless about eating, especially with end of semester projects and tests. I don’t run enough, or cross train. I’ve started to get back on track this past week, other than eating out for dinners…But congrats on being able to eat (mostly) healthy, especially this time of year!!

  2. I’ve started keto a month ago, and I think atkins and keto does have the same principle. Thank you for sharing a great breakfast recipe.
