It’s crazy to think that when we blink: Halloween will be upon us. You think I’m exaggerating, but I think you know I’m right here. Remember when it was the 4th of July- like, yesterday? Ha! As August rolls into September, it’s time to start thinking about all things Halloween. And on my list: these delicious and adorable Mickey pumpkin cake donuts!?

Mickey Pumpkin Cake Donuts
We are crazy for anything Mickey shaped or Halloween around here.
When you combine the two, you know we are all in- which is why we love planning our Disneyland Halloween trips.
Since we don’t have one of those trips on the books this year (boo- and not in the fun Boo To You way) I’ll have to settle by making Halloween as fun as possible here in Virginia.
Challenge accepted!
One way we’ll do that is with these awesome Mickey Pumpkin?Cake Donuts.
What do we love about them? They are pretty easy to make- and you know I’m all about easy around here.
And of course: adorbs. I mean- anything Mickey shaped is just too fun!
Also: delicious. My kids are asking for these already.
I mean, there’s absolutely no downside to adding these Mickey pumpkin cake donuts to your Halloween party ideas.
Mickey Pumpkin Donuts Ingredients
Makes 15 donuts.
1 C flour
1/3 C sugar
1 tsp baking powder
1/2 tsp salt
2 tbsp unsalted sweet cream butter, melted
1 large egg
1/3 C + 1 1/2 tbsp whole milk
1 tsp pure vanilla extract
Mickey Pumpkin Donuts Directions
Preheat your oven to 350 degree’s and spray a doughnut baking pan with Pam baking spray.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a small bowl, whisk together egg, milk, butter, and vanilla extract.
Combine the wet ingredients in with the dry ingredients and mix until well combined.
Spoon batter into doughnut pan and bake for 10 minutes.
Remove from oven and allow to cool for 6 minutes before removing and placing the doughnuts onto a wire rack.
Repeat steps until all batter is used.
Vanilla doughnut icing ingredients
4 C powdered sugar
1 tbsp clear corn syrup
1/2 C whole milk
1 tsp clear vanilla extract
Orange, yellow and Green gel food coloring
3 disposable piping bags
Mickey Pumpkin Donuts Decorating ingredients
1 box of Pixie Sticks (Sticks only) cut into 1/3rds
1 bag of orange candy melts
Donut Icing Directions
Using a standing mixer, combine the powdered sugar, corn syrup, milk and vanilla extract and mix on medium to high speed until smooth and thick.
Scoop about 1/4 C of the icing into 2 bowls.
Add a few drops of green to one bowl.
Add a few drops of yellow to the second bowl.
Scoop the two icing’s into their own piping bag.
Add a few drops of the orange gel food coloring into the remaining white icing.
Scoop about 5 TBSP of orange icing into a piping bag and set aside.
Decorating directions for the?Mickey Pumpkin Donuts
Using a sharp knife, cut slits into the top corners of the doughnut for Mickey’s ears.
Place an orange candy melt into the slits.
Place doughnuts onto a wire rack and carefully pour the remaining orange icing onto the doughnuts.
Allow to dry for 30 minutes.
Carefully push in a pixie stick into the top center of the doughnut in between the ears.
Cut the tip of the green piping bag and pipe green icing onto the pixie stick. Make sure the stick is completely coated.
Allow to dry for 30 minutes.
Using the green piping bag, pipe 3 lines onto the “Stem.”
Using the orange piping bag, pipe the details of the pumpkin onto the doughnuts.
Allow to dry for 30 minutes.
Using the yellow piping bag, pipe the 3 dots onto the doughnuts for the eyes and mouth.
Allow to dry completely before enjoying!
