I love easy recipes and projects. Things don’t get much easier than this Rainbow Sherbet St. Patrick’s Day Punch. Truth be told, you can make this for just about any occasion! Kids (old and young) love it.
So, sure. Sometimes I complain about all the over-the-top celebrations concerning some of the minor holidays out there.
The over-the-top crazy presents and gifts coming from things like leprechauns and pumpkin elves (yes, apparently, this is a thing?!) drive me a little crazy.
Can’t we just color the milk green on St. Patrick’s Day and call it good?
My kids said NO.
They wanted a full-on “Grandma” St. Patrick’s Day and suggested I get my shizz together.
My mom’s family is Irish- good ol’ Chicago area Irish, which means they like to enjoy their day.
She’s been spoiling everyone on St. Patrick’s Day with corned beef & potatoes meal topped off with Sherbet Punch for dessert for years.
The kids miss her, and I knew I had to make something happen today in honor of our Irish heritage.
Rainbow Sherbet St. Patrick’s Day Punch
Ingredients
- 2 scoops rainbow sherbet (or lime if you want to go all green)
- 2 oz pineapple juice
- 7-Up or Sprite
From here, it’s pretty easy to put together.
My kids will be making theirs when they get home from school with little supervision needed.
Scoop the ice cream, pour your pineapple juice to taste, and fill the glass with Sprite.
You’ll want to be careful when pouring the Sprite as the combination of sherbert and carbonation makes a fun, frothy topping.
But it’s super easy to get carried away and overfill the glass!
If you let kids help, just keep an eye on things and pour slowly.
Garnish, stick a straw in it, and enjoy.
